I cook extra rice on purpose now. Every Tuesday night, about 2 cups more than
we need. Nobody at home asks why until Wednesday morning, when the whole kitchen smells
of fried onion. Fresh rice is soft and sticks in the pan. After a night
in the fridge it's firm. Every grain stays separate, and the edges go a bit crisp.
Cold rice is the trick. My method is boring. Oil, a sliced
onion until it's brown at the edges, then turmeric and chilli powder.
Rice goes in on high heat. I press it flat with the
back of the spoon and leave it alone. If there's a boiled egg
in the fridge, I chop it in. A few curry leaves if
my mother has some. Whole thing takes 8 minutes. I've timed it, because
I eat it standing at the stove. My father watched me do
it once and said, you're frying yesterday's rice? Like it was a crime.
I gave him a plate. He didn't say anything for a minute, then asked if there was more.
There wasn't. He now checks the fridge on Wednesdays and says, no rice left
from last night? Last week I told him there was none, as a joke.
He made a very sad face. I felt terrible. Plain rice only.
Leftover biryani rice has its own spices and it fights with the onion.
Lentil curry over it works too, but only when it's thick. Thin curry turns everything to porridge.
Don't use rice older than 2 days. Mine once smelled odd and I threw the whole batch.
Curd rice I haven't tried. Somebody told me it's possible and I'm scared to find out.
