2 am, Thursday night. Woke up hungry and found the rice from dinner still sitting on the counter in the
pot. Lid on, so I thought fine. Then I remembered I'd cooked it at 7. 7 hours, in Jeddah, kitchen
AC off. Instead of just eating it or throwing it, I opened Google. Big mistake. 45 minutes later I knew
more about rice than any person should know at 2 am. There's a bacteria that lives in rice and survives cooking.
Reheating doesn't kill what it leaves behind. Some websites said 2 hours max. One said 1
hour if it's hot. Another said the whole thing is overblown. Then there was a Reddit
thread where a man said he's eaten day old rice his whole life and he's 80.
Then a reply under it from someone who ended up in hospital. I read the whole thread. All of it. By 2:45
I wasn't hungry anymore. Just scared of rice and a bit embarrassed. I threw it out, ate 4 Marie biscuits standing in
the kitchen and went back to bed. My roommate saw my search history in the morning because I'd left the laptop open.
He hasn't let it go. Every time I cook now he asks, so what's the time limit
on this one, doctor. What's your most embarrassing late night search? Please tell me there's worse than mine.
Rice now goes in the fridge within an hour in this flat. New rule, roommate's idea, he's still laughing. My
mother would have just eaten it, by the way. She'd say we ate like this for 40 years and nobody died.
I asked her on the phone. She said exactly that, word for word.
