My friend Naveen watched me eat a dosa for 3 years before he said anything. We
were at a breakfast place near Ameerpet. He put his spoon down and said, why are
you eating it like a clock? I looked at my plate. I'd torn off the outer
rim all the way round and was working inwards. I said, how else do you eat it?
He said, you start in the middle, obviously. That started a debate at the
table. 4 of us, and 4 different methods. One guy tears it in strips.
Naveen folds it in half and eats the fold first. The 4th guy only
eats the crispy bits and leaves the soft centre. I didn't know that was allowed.
We asked the waiter. He said, sir, I just bring it, I don't watch. Since then
I notice it. Mine goes edge, edge, edge, and the potato in the middle comes last. I
tried going middle first at home. It felt like reading a book from the back. My
mother breaks every idli into exact halves before she eats any. She's done it all her life.
My brother eats rice and curry in separate rounds. Nobody ever sat us
down and taught this. Last Sunday my father came over and I watched
him eat. Straight into the middle, not a care in the world. I
said nothing. That same morning Naveen texted me a photo of his plate,
eaten edge first. He says he's switched because the crisp part stays crisp
longer that way. It doesn't. I tested it twice. I'm not telling him, though.
